Air Mail

History: The Air Mail cocktail is a traditional Caribbean cocktail as a tribute to the launch of modern ‘AirMail’ postal service back in the early 1900’s to the islands via single prop planes. As an homage to our launch and discovery of the brand via the same style plane - it is with great honor that we reintroduce this refreshing, long-forgotten cocktail.


2 Parts Single Prop Original

1 PART HONEY SYRUP *

1 PART FRESH LIME JUICE

TOP WITH SPARKLING BRUT ROSÉ

Add Single Prop Original, lime and honey syrup into a cocktail shaker. Add ice and shake until chilled. Strain over ice into a collins glass. Top with Rose Champagne. Garnish with a lime or orange twist.


* Honey Syrup: equal parts water & honey

Get Swizzy With It

2 parts Single Prop Original

½ part falernum

½ part demerara syrup *

¾ part fresh lime juice

Combine all ingredients into a shaker. Shake vigorously and strain into a collins glass with crushed ice.

Garnish: A couple dashes of angostura bitters and a lime wheel.

* Demerara Syrup: 2:1 ratio raw sugar and water. (this is different from simple syrup)

The Red Eye

A cure for any jet lag to get your journey started


2 Parts Single Prop Original

1 La Colombe Draft Latte Can (Mocha or Vanilla)

Pour 2 parts Single Prop Original over ice in a coffee mug. Open 1 can of La Colombe Draft latte and fill. For the adventurous type, drink 1 sip from can and add Single Prop Original directly to can.


Variation

2 Parts Single Prop Original

3 Parts Espresso

1 Part Califia Betterhalf Unsweetened Creamer

Or 1 Part So Delicious Coconut Creamer

Simple Syrup to taste

Pour all ingredients into coffee cup over ice and stir vigorously. For a frothier version try shaking.

The Journey

2 parts Single Prop Original

2 parts melon juice

(cantaloupe / honeydew or combination)

½ part fresh lemon juice

¼ part agave nectar

Combine all ingredients in a shaker with ice. Shake vigorously, strain and pour into a lowball glass with fresh ice. Top with club soda.

Garnish: Dash of grapefruit bitters and sliver of melon

Sun Soother

2 parts Single Prop Original

1 part aloe vera juice

¼ part rose water

½ part honey syrup *

1 part fresh lime juice

Add all ingredients into a shaker with ice. Shake and strain into a coupe.

Garnish: Lime wheel


* Honey Syrup: equal parts water and honey

Prickly Pineapple

2 Parts Single Prop Original

2 Parts fresh pineapple juice

1 part ginger syrup

¼ part fresh lemon juice

Combine all ingredients into a shaker with ice. Shake vigorously, strain and serve in a coupe.


Ginger Syrup

1 cup fresh ginger

1 cup light brown sugar

1 cup water

Add all ingredients to a saucepan and simmer for approximately 1⁄2 hour until the sugar is dissolved and texture is syrup like. Let cool and store in refrigerator.

Island Hopper

2 Parts Single Prop Original

½ part falernum

¼ part Keystone Rail Service Triple Sec

¾ part fresh lime juice

Add all ingredients into a shaker with ice. Shake vigorously and strain into a coupe glass.

Garnish: Lime Wheel.

Classic Daiquiri

2 Parts Single Prop Original

1 part fresh lime juice

½ part simple syrup

Combine all ingredients into a shaker with ice. Shake vigorously and strain into coupe glass.

Garnish: Lime wheel

Melon Daiquiri

2 parts Single Prop Original

1 part cantaloupe juice

1 part simple syrup

1 part fresh lime juice

Combine all ingredients into a shaker with ice. Shake vigorously and strain into coupe glass.

Garnish: Cantaloupe sliver and dash of orange bitter

Classic Mai Tai

2 Parts Single Prop Original

¾ part fresh lime juice

½ part Keystone Rail Service Triple Sec

¼ part Orgeat

¼ part demerara syrup *

Combine all ingredients into a shaker with ice. Shake vigorously and pour entire contents of shaker into collins glass.

Garnish: Optional mint sprig


* Demerara Syrup: 2:1 ratio raw sugar and water (this is different from simple syrup)

Mojito

2 Parts Single Prop Original

8-10 Mint Leaves

3 Lime Wedges

1½ Raw Cane Confectioners Sugar *

1 Part Club Soda

In a tall glass add mint leaves, limes, and sugar. Muddle just until the limes begin to juice and the mint leaves are bruised. Fill glass with chipped ice and pour Single Prop Original Rum. Top with club soda. Garnish with additional lime wedge and mint. Use a paper straw if preferred or enjoy without.

Garnish: Lime, and Mint.


* Cane Confectioners Sugar: Powdered sugar in the raw, regular confectioners sugar may be used
